




For the past few weeks we have been canning our harvest from our summer garden. It has been a lot of work but I know that we will be thankful for the time invested now when we sit down this winter and eat the yummy food. We have been gone quite a bit the last of this summer and the garden was out of control. Ashley and Dave went out and picked baskets of tomatoes and green peppers along with all the chili peppers we had. We were up till 2 a.m. the other day just getting the salsa done with a lot of tomatoes left over. Today Ashley and I did a second batch of spaghetti sauce. Thanks to Lynnette, we have the BEST spaghetti sauce in town (and plenty of it). Tomorrow Ashley and I will do some peaches and hopefully some hot pickles and Monday we plan to just see what we feel like canning. There are plenty of beets out in the garden left to be delt with not to mention the carrots. We barely got any potatos this year. NONE of the red potatos came up, just the plants to fake us out. We will plan things a little differently next year.
